Hours JSON-LD that says 8-6 with a shipping line that says "order by 2pm" is coherent if both are true. It is a lie if the hero says same-day ship until close. Two clocks.
Put door hours in hours schema and on the page. Put packing cutoff in shipping copy. Do not let one overwrite the other in the brief.
Door hours
NAP and hours tools. Match the physical shop. Google's local structured data is for the location, not the UPS truck.
Packing cutoff
A time a human is wrapping. If that human leaves at 2, the site cannot promise 5pm same-day ship.
Weekend
Open Saturday for pickup and closed for outbound mail is a normal small-shop fact. Write it. Do not make Cipher guess.
Holiday
Door closed and mail closed can differ by a day. Both need sentences. See holiday closure in ops.
Overnight jobs
Do not brief a midnight ship if nobody packs at midnight. Jobs follow the brief's fantasy as easily as its truth.
GBP
Maps hours are door hours. Do not put a shipping cutoff in the Maps hours field. We do not sync GBP.
Limits and caveats
We are not a warehouse WMS. Empty cells stay empty.
If a sentence would require a competitor SKU we have not verified, or a statistic we did not measure, it does not belong here.
What to do after you read this

OpeningHoursSpecification is for when the business is open. Shipping is copy. Do not stuff a cutoff into Monday hours to game anything.
What if I am online-only?
Then door hours may be support hours. Say that. Do not fake a storefront.
Pickup until close, ship until 2?
Write both. Good.
Does Pro change hours?
No. $12 does not add a second clock. You still type them.
